Sauerkraut ferments for a total of 3-6 weeks. The first stage (of 3) of fermentation is already longer than the whole fermentation of kimchi.

I like both but they are completely different

A driver not using a seatbelt is a risk for everyone else on the road. It absolutely should be a punishable offence to drive without.
